On the sign up sheet there’s a link to go back to the sign up form. How can I change the text? Do you have a hook for this? Thank you.

You can do this using a translation. If your site is in English, you would just create an English translation that include that phrase to change it to whatever other phrase you would like. For further information on how to set up a translation, you can refer to Translations in the Sign-up Sheet plugin.
